Cook pasta according to package directions. Reserve at least .5 cup of pasta water before draining.
Blend cottage cheese until completely smooth.
Heat a sauce pan over medium-high heat and add the reserved pasta water.
Add blended cottage cheese, shredded cheddar, garlic powder, MSG, and salt to the pan. Stir to combine.
Add the cooked pasta to the sauce and toss to coat evenly. Serve immediately.
