Thai Basil Chicken Fried Rice

A flavorful Thai-inspired fried rice dish with chicken, fresh basil, and a savory sauce made with oyster sauce, fish sauce, and red curry paste.

Ingredients

2 servings
  • tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • ½ tablespoon soy sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon water
  • 2 cups cooked jasmine rice, chilled
  • 3 large garlic cloves, chopped
  • 1 Thai chile, chopped
  • ½ red bell pepper, chopped
  • ½ medium onion, chopped
  • 2 eggs
  • 4 ounces chicken
  • 1 cup Thai basil leaves
  • to taste green onion

Instructions

    Whisk together oyster sauce, fish sauce, soy sauce, and water. Set aside.

    Heat oil in a wok over medium-high heat.

    Add the garlic and chili peppers and stir fry for 30 seconds. Add red curry paste.

    Add the red pepper and onion and stir fry until the onion is translucent. Add the chicken with the onion and red pepper and cook until chicken is done.

    Push ingredients in the wok aside and quickly scramble the eggs.

    Add the oyster sauce mixture and stir everything together.

    Raise the heat to high and add the chilled rice. Stir until blended with the sauce and other ingredients, breaking up clumps of rice with the back of a spoon.

    Add more soy, oyster, or fish sauce if necessary or to taste.

    Add green onion and basil and stir to combine.
